Pecan Crusted Plank Salmon

Soak plank for one hour (submerged)
Cut salmon to fit plank
Lightly coat with olive oil sprinkle with salt and pepper
Cover with grainy French Mustard
Cover with Brown Sugar
Drizzle a tablespoon of honey (back and forth motion)
Sprinkle with 1/3 cup chopped Pecans
Place on one end of hot grill (350& deg;-400& deg;) until it smokes
Turn off burners under plank keeping others on (indirect grilling)
Cooking time is 12-14 min .check to see if it flakes with fork easily
